Recipe by Kim McCosker & Rachael Bermingham from 4 Ingredients
1 cup self raising flour
4 tbs. whole egg mayonnaise
3/4 cup milk
4 rashes of bacon, diced and fried
Mix all ingredients until just combined. Fill muffin cups two-thirds full. Bake in a pre-heated oven at 180C for about 15 - 20 minutes.
Sparkling Whites, Dessert Wines and Rose are the best wines to pair with Quick muffins.
