Bean Salad


Bean Salad

Colourful, healthy salad - suitable as a side dish or main vegetarian. Great summer recipe!

Serves 4 to 6

Ingredients

  • 1 x 420g can 3 bean mix
  • 1 x 420g can red kidney beans
  • 1/2 cup green beans, fresh, chopped into 1cm pieces
  • 1/2 cup red capsicum, chopped finely
  • 1/2 420g can corn kernals
  • 1/2 small red onion, finely chopped
  • 1 tblsp fresh thyme
  • 1 tblsp fresh dill, chopped
  • 1 tblsp fresh parsley, chopped
  • Dressing
  • 3-4 tblsp lemon juice
  • 2 tblsp white balsamic vinegar
  • 2 tblsp extra virgin olive oil
  • salt & pepper to season

Method

  1. Combine all salad ingredients in bowl & toss through dressing. Ready to eat straight away but left overnight in the fridge I personally think it tastes better the next day after the dressing marinates the salad ingredients.
  2. Enjoy!

    LOL! This looks delicious.... I've got a BBQ on the weekend - I'm gonna try this cause it sounds tasty and has lots of texture - it may not look as good as yours though : )
