Oysters with pancetta, balsamic, goats curd & semi dried tomatoes


Ingredients

  • 12 Oysters
  • 3 tablespoons chopped pancetta, prosciutto or Bacon
  • 1 tablespoon goats curd
  • 1 tablespoon chopped semi-dried tomatoes
  • 3 tablespoons aged Balsamic vinegar
  • 4 julienne basil leaves
  • 2 cups Rock salt
  • sea salt if needed
  • cracked Black pepper

Method

  1. Place the oysters on a bed of rock salt in a baking tray
  2. Place the goats cheese, tomatoes, basil & pancetta onto the oysters
  3. Drizzle with balsamic vinegar
  4. Place under the grill until the bacon is nice and cooked and serve with cracked pepper
