  • 300 g topped and tailed beans

  • 4 x 250g t-bone steaks

  • sea salt

  • ground black pepper

  • 1 sprig chopped rosemary

  • 2 teaspoons butter

  • 1 finely chopped garlic clove

  • extra virgin olive oil

  • 4 large wedge lemons


  • 1.

    Blanch the beans in a saucepan of boiling salted water for 5 minutes

  • 2.

    Lay the steaks on the grill and seal well before turning them

  • 3.

    Season with salt and pepper and sprinkle with rosemary

  • 4.

    Cook the steaks until they are just under your desired likeness, then leave them to rest and keep warm

  • 5.

    In a large pan melt the butter and add garlic

  • 6.

    Cook butter until slightly golden

  • 7.

    Add the beans and toss until hot

  • 8.

    Brush the steaks with olive oil and return to char-grill to finish cooking

  • 9.

    When serving garnish with a generous wedge of lemon and finish with a drizzle of extra-virgin olive oil
