Bistecca al la Fiorentina


Ingredients

  • 300 g topped and tailed beans
  • 4 x 250g t-bone steaks
  • Sea salt
  • Ground black pepper
  • 1 sprig chopped rosemary
  • 2 teaspoons butter
  • 1 finely chopped garlic clove
  • Extra virgin olive oil
  • 4 large wedge lemons

Method

  1. Blanch the beans in a saucepan of boiling salted water for 5 minutes
  2. Lay the steaks on the grill and seal well before turning them
  3. Season with salt and pepper and sprinkle with rosemary
  4. Cook the steaks until they are just under your desired likeness, then leave them to rest and keep warm
  5. In a large pan melt the butter and add garlic
  6. Cook butter until slightly golden
  7. Add the beans and toss until hot
  8. Brush the steaks with olive oil and return to char-grill to finish cooking
  9. When serving garnish with a generous wedge of lemon and finish with a drizzle of extra-virgin olive oil

    the other bisteca florentina video recipe is better that the chick does. buddy you gotta put salt on b4 you cook it. it's going to take out minimal liguid but give a tasty impressive looking crust. ry ry
