Mexican Rice


Ingredients

  • 200g stir fry beef
  • 3 mushrooms
  • 3 spring onions
  • Chilli oil
  • Fire roasted capsicums
  • 1 cup of basmati rice
  • chopped garlic chives

Method

  1. Add chilli oil to a large pan and heat. Sear mushrooms and spring onions.
  2. Add beef and sear for 2 minutes. Add fire roasted capsicums and fry for a further 3-5 minutes or until beef is cooked and capsicums are heated through.
  3. Serve on steamed basmati rice with garlic chives as a garnish.
