Hi I love to mix up my rissotto ingredients from time to time. At the moment my fave is roast sweet potato with mushrooms and spring onion. Along with a mixture of white wine and chicken stock..it comes out a treat...
Anyone else have a fave at the moment?

My hubby is a vegetarian so our current favourite is sweet potato (orange) and lemon zest with saffron infused chicken stock.

My all time Fave is chicken livers, tomato and white wine. My grandmother used to always have a pot of it made for me when I'd visit as a child. It's YUM!

I agree with many of you - roasted sweet potato - but I also like to include other roasted vegetables like carot, parsnip, zucchini etc the roasting adds a lovely flavour and every batch turns out a bit different!

My all time favorite has to be seafood, any type. Brings back memories of perfect holidays in Italy and Croatia
