Any good recipes for mud cakes without eggs?

Hi LP61, Have you tried serching in the "recipe search" - I just did a search using the keyword "cake", noted that "chocolate" was in the fridge and put "eggs" in the don't like box ... came back with a couple of pages of results. Some of them were quite left of centre (like the chocolate and mayonnaise cake) but I think they're probably worth a try! Good luck .... it must be hard!

A friend of a friend's daughter is highly allergic to eggs. This is her cake recipe that ends up tasting like a really great White Mud Cake!
In a bowl mix:
-1/4 cup water
-2 Tbsp oil
-2 tspn baking powder
Then add:
-3 cups plain flour
-1 3/4 cups caster sugar
-1 tspn vanilla extract
-125g butter
-1 1/4 cups water
-2 1 /2 tspn baking powder
Beat for 1 minute on low then 3 minutes on medium. Pour into 2 greased sandwich tins lined with paper and bake for about 35 mins.
White Chocolate Topping:
-170g cream
-200g white chocolate
Heat cream, stir in chocolate til melted and spread some between cakes and pour the reast over cake.
Hope this hits the spot. I've made it even though I can eat eggs and thought it was fantastic!
It's correct that you put baking powder in twice - I've got no idea why, but it works.
