Rice Pudding

Bill made a real simple Rice Pudding on one of his shows last week or the week before but I can't find it in his recipes, does anyone have it?

I've got all Bill's books and this is the only Rice Pudding recipe - from current series using his HOLIDAY cookbook.
COCONUT RICE PUDDING WITH CARAMELISED PINEAPPLE
Serves 4
400ml coconut milk
500ml milk
225g arborio rice
3 tbls sp caster sugar
1 tsp vanilla extract
TO SERVE
Caramelised pineapple, below
Preheat oven to 170degC and lightly grease a 1.5litre baking dish.
Put the coconut milk, milk, rice, sugar and vanilla in the dish and stir together well. Cover with foil and bake for 1 1/4 hrs, then remove the foil and return to the oven for another 30-35mins, until nicely browned on top. Leave to rest for 10mins before serving with caramelised pineapple.
CARAMELISED PINEAPPLE
1/2 tsp ground cinnamon
2 tbls brown sugar
3 thin sliced fresh pineapple, cut into small triangles.
Mix together the cinnamon and sugar on a large plate. Toss the pineapple triangles in the cinnamon sugar, so they are coated on all sides.
Heat a large non-stick frying pan over medium-high heat and cook the pineapple for 1min on each side or until caramelised.

Another great rice pudding is from Gary meighan, he uses his standard heaps of sugar! and tops it with jam.. it is rich, unusual but decadent!

Good recipe
2 cups aborio rice
2 lt milk
2 cups sugar
vanilla
put all in a non stick pot and cook down, add more milk at the end when it has cooled
nice and creamy
