L.A Genuine Foods Dilemma

Hello food lovers!
I'm looking to compile a list of genuine L.A foods, but it's very difficult to figure it out just because LA is such a diverse and global city. If a visitor is curious about L.A, what popular dishes should one necessarily try? Any ideas?

I always found food in L.A. to be less than memorable. The influence seems to be mostly Mexican or Tex-Mex, the one and only thing that I really enjoyed, was El Pollo Loco which is similar to Nandos. Of course that's "fast food" but nothing else actually stood out. Some of the BBQ is good but not unique to L.A. and have had some lovely brunches at The Cannery at Newport but their menu isn't unique either. I can't think of anything that screams "you can't leave L.A. without trying....".
