Yoven Alankalee is Head Pastry Chef at Jaques Reymond in Prahran, Melbourne. Starting out at 8 years of age, head pastry chef of Jacques Reymond, Yoven Alankalee really did start out young; yet it would seem the logical choice because of his father owning a pastisserie. In-fact, Joven’s first experience with macarons was when as a child he burnt his father’s macarons back home in Mauritius.

Much like his partner at Jacques Reymond, they share a similar food philosophy, simplicity and quality ingredients. Even when serving them at Jacques Reymond they do not overpower them on the plate, alone they speak volumes. This works well with the idea of Joven’s, that a macaron is like a “simple kiss at the end of a meal”, something sweet, elegant and sensual. Personally for Joven, he favours the pineapple and coconut filled macarons.
