Will Studd

Celebrity Chef

Will Studd has been at the forefront of specialist cheese in Australia for the past two decades, but his passion for cheese first originated in London during the 1970’s where he established a chain of delicatessens.

With more than three decades of experience he has done much to expand the horizons of the local industry, in a role that has included the distribution and retailing of fine cheese, media commentator, and successful author.

Will’s book Chalk and Cheese has won numerous awards, and is recognised by cheese specialists around the world as a valuable guide to understanding good cheese.

His contribution to traditional cheese is recognised in his title of Ambassadeur/Maitre Fromager of the prestigious Guilde des Fromagers in France, and he was recently presented with the Ordre Merite Agricole for his defence of traditional raw milk cheeses in the Australian market.

As presenter of Cheese Slices, Will explores the traditions, characters and flavours that make the world of cheese a rich and varied one.

Watched this episode on Masterchef when you did the Baked Clarines and made it many times with the camembert and once with the Clarines which was given to me. Absolutely fantastic. Any idea where to find Clarines cheese in north east suburbs of Melbourne?

I would like to know where to find the cheese Burrata here in Australia. This cheese was featured on an episode of Cheese Slices about Italian cheese (I think). If cant get it here, is it possible to get it from overseas?

I have to say in response to a couple of the questions, i am a massive cheese fan and i always go to Blackwattle Deli at the Sydney Fish Market. Odd place, i know, but they have a much better selection thast is well loked after and taken care of. They also stock Burrata on and off and if you ask them they'll get it in for you. I believe the name of the cheesemonger there is Cleo or Clio.

Why don't we get unpasteurised cheese in Australia? It would be great to be able to buy a proper French brie or camembert.

My family just love clarines. When I showed them the replay of your baked Clarines, my son just went crazy over this recipe. Guess what we are all going to enjoy on Christmas Day. Thank you - excellent.

As a cheese lover I have used Will's DVDs before a big event. His narratives takes all the guess work for picking the right chese for the right occassion. The difficulty is findong a decent cheese shop. DJs in Sydney is the only place I can find with many of the fine cheeses Will talks about.
