He describes his food style as a new style – he’s own take on classical with a modern twist, his vision and passion is island based cooking – nearly all produce is sourced from within Jersey, especially in the summer season where nearly 90% of his produce is local.
Shaun has people growing, rearing and catching fresh produce for him every day. He knows them personally; you will find them in his kitchen at times. As Jersey is closer to France than England, Shaun also sources game from France. It was Shaun’s mum who first sparked his interest in cooking, when he used to help her with cooking on Sundays. He always knew it was what he wanted to do when he left school.
It was at Longueville Manor that Rankin fell in love with Jersey produce. He says that Jersey is one ‘19 mile long garden’. He knows all the producers and thinks he has some of the best produce at his fingertips.
He has worked at Bohemia for 6 years after the Huggler Family approached him to open the restaurant. In the first 12 months he obtained a Michelin star. Bohemia was awarded 4 Rosettes by the AA in 2006/7 2007/8.
