Phillip Prosia

Phillip Prosia is the Head Pastry Chef at Seasons Provedore, which is located on Lygon St in Carlton, Melbourne. Phillip recognises that his culinary journey began when he was just 12 years old, and he began cooking with his mother. With a love of all things sweet, as a child Phillip saw cooking as a science experiment, constantly checking the oven to see if his creations would work. Admitting that his first experience with creating macarons was disastrous, it inspired him to continue working on his skills and he gained a new level of respect for chefs who specialised in producing macarons.

Phillip is committed to using only natural flavours, no flavours out of a bottle, and follows the philosophy of, ‘baking with your heart more than your head’. The most important element to consider when making macarons for Phillip is the ingredients, as a macaron will always show when poor ingredients have been used. Keeping up to date with international macaron-makers, Phillip envisages the macaron as the pinnacle of the pastry chef world, conjuring both expertise and encapsulating the Parisian lifestyle.
