Nans Wojtcak is the part-owner and Executive Pastry Chef of Choukette, located on Sydney Rd in Brunswick, Melbourne.
Choukette boasts a very approachable and French country setting, where sharing ideas helps to create an inspirational environment in the kitchen. Noting that his greatest influence in his cooking was his apprenticeship, Nans learnt to respect the traditional recipes and origins of the ingredients and the final product. While maintaining that the foundational techniques is always important for creating a macaron, Nans believes that it’s, ‘all about keeping the classics for your customers, but never losing your edge as a chef”.
Through working together in a large, open kitchen, the teams at Choukette are dedicated to recreating and taking French baking around the world.
