I'm a pharmacist who has a very great passion for cooking and baking..I was influenced by my mom's great cooking and my elder sister who loves to cook as well.. I made my first cake when I was in my 6th grade in school.. I've been doing so since more than 20 years now and I enjoy it so much .. Love to search, modify and create new recipes.. and would like to share some of them here with you as I do with my friends here in Bahrain and back home in Jordan.. Hope you try some of my recipes and hope you enjoy them ..

    As-salamu alaykum Huda! I just found this site and all your lovely recipes yesterday while googling recipes for Nescafe. I just recently moved to Dammam, KSA so we are almost neighbors, mashaAllah! I'm excited to try your recipes, especially the dessert recipes. I haven't baked much since we moved here, because the ingredients available in KSA are not the what I was used to in the US. I'm happy to find all your recipes because they use the same ingredients that are available to me now, alhamdulillah! I'm planning to make a lot of your desserts for iftar, inshaAllah :)

      Salam my dear ..Thsnk you soooo much for your sweet kind words, I hope you love what you try .. All ingredients (or at least most) you'll find them available in Saudi .. If you wanna do something you're used in prepare in the US, search in some supermarkets that bring their own stuff, some ingredients which are unknown for the area here, you might find them in some special shops. For me I check and try recipes from allover the world, so I keep searching for the ingredients or check something similar, so you will manage for sure ;-) And If you need any any help, please do contact me at huda1016@hotmail.com Would love to meet you If you ever come to Bahrain, you know, it's just 20 minutes away ;-) Ramadan Mubarak my dear :-)

Hope u try and like any recipes you would try from here :-) As for books, I usually try to check around, but many have nice recipes and trust them.. I guess you can check out Horiyyet el matbakh:http://www.cakeobake.com/2011/08/blog-post_04.html check out also this blog, it;s not for a know auther, but it's really a nice blog shows steps for things she is doing,desserts: http://www.cakeobake.com/ Some recipes I might take from Chef Osama Al Sayyed, also there's a nother Chef called Chef Antwaan, a Libanies chef..     Huda, ur a pharmacist , u know that Nutmeg is sedative , you use it in most of your recipes - pls watch out ?? ????? ???? ?????? ????

      Salam alaykum, Thanks for the reply. I will just substitute allspice for the nutmeg and vanilla powder for the extract. I just recently moved to Dammam, KSA so we are practically neighbors, mashaAllah! Jazaki Allahu khair for all the great recipes. I moved here from the States, and all the ingredients here are so different than what I am used to, so I think that your recipes will help me a lot, inshaAllah, because they use the same ingredients we have in KSA.       thank you dear for your comment. There are two says from Islam point of view regarding using it in food or medicine.. So, it's upto you which say you want you follow..So If you want to follow the say of using it is haram, you can just remove it, and If your the other say follower, you use it.

      Huda, mashaAllah these are delicious looking recipes. I just wanted to let you know I recently found out using nutmeg is haram; it would be the same as putting some alcohol in the recipe. I don't think many sisters are aware of this. I hope that is helpful. Thanks for all the great recipes!

    Salaam Huda! Love your recipes, beautiful. I am going to try that knafe thats fried Inshallah. Could I just heat the oil and take it off the heat and then place the knafe dough in it, or do I have to pour it?

      Hi dear .. u need to just make the oil little warm, not hot.. then pour it over the kunafa.. cz u need to arrange it first in the tray, that's way my dear.. it'll sizzle a little when u pour the warm oil over the kunafa in the frying tray. Then u put the tray back over the heat and continue frying .. let me know if u need to know anything else :-) Thank you so much for liking ;-)

    Hi Huda, Your recipes look amazing. I've been searching for a great osmalieh recipe for a while and would love to try yours. I see in the picture you've made mini versions. How did you go about doing so? I would think they'd lose their shape once you fry them. Thanks!

      Hi Mashzah .. so sorrry for the late reply!! i've been so busy lately and couldn't check my page.. those ones i made them in muffin baking tray, but it was difficult to fry them in the muffin tray.. after that i made round molds to keep in the pan when frying, that would much much better .. I made them out of empty small cans.. try and let me know how it goes.. u can send me on huda1016@gmail.com

    huda huda huda dear mashala am sooooo impressed with ur recipes i looooove them all teslem edeech and u should get a big bouquet of flower because you are sharing them ,,,because some people they do things but do not give the recipe but mashala u are a wonderful person... am mona from iraq live in dubai i have three girls and they love cakes so am always doing cake for them and i hope we can be friends

    salaam alaikum Hudaa.. are u originally from Ürdün? ill be so glad if u could post some traditional recipes of Jordanian dishes/sweet stuffs and so on...my sister is married t a Jordanian and he misses his traditional dishes..i've been searching for some good recipes but the always don't come out the 'traditional way' xD JazakAllah :)

    thank you huda i have been searchin for this recipe for ever my mother in law makes this the best but try getting a recipe from her, you know how the old timers are a little of this and a little of that everything is by eye no concept of measureing cups! let me know other great arab recipes do you have one for kaik with flour or mamoul bi jaws

    I was away in Dubai last week.. it was really fun , and i enjoyed so much cooking for my sister and her husband there.. made them Aamal's pasta, Rocket Salad with cherry tomatoes&Pomegranate. Also Chicken with Thyme&Olive oil (They LOVED it), Spring salad.. for dessert made Odret Aader, which they adored and was amazed how it's prepared. I took with me Date Jewels which I've prepared, in a nice box, as a small gift when i reach there.. I was so happy that they loved it as well.. Now i'm back, and inshalla will be with u with more new tasty recipes which I hope you'll all love. Cheers ;-)

    just made a batch of baharat mix and i am loving the aroma in the kitchen. i made boneless lamb strips with simply olive oil and salt and pepper then put in loads of the baharat mix and cooked until lamb was nicely crisp on the outside and beautifully tender on the inside. the lamb was gorgeous in flatbread with garlic sauce and salad - best kebabs i've ever made - loving middle eastern influenced food right now

      yes, well, I showed my mum many of your recipes, she was amazed about how many of them she knew! the other week we went to sydney and went to an arab bakery and bought all of the ones you have posted that they have. THEY WERE ALL DELISH! I will hopefully be making some of these soon!

      by the way, lots of the arabic recipes which i'm posting are not known to all arab people, I wanted to share the ones which are sooo special and only few know and cook them ..and cause some people know the food but don't know how to prepare it and they can't find the recipe over the net, so wanted to help in this issue ... so donno ig ur mom recognized any of the arabic recipes i've posted.. but i hope she liked them :-D

      Well dear .. tell u the truth, it's very diffeicult, and I don't sleep at night as u said :-) i go to work at 8am, back at 6pm .. so as u see no much time left, add to that many social activities to be done .. I ended up not sleeping to finish what i plan to do :-) I'm so glad u liked the recipes which i've submitted till now, hoping u'll like the coming ones asw ell :-) but i didn't get ur name ??? and where are u from ?? cz u were wordering if u might get all the ingredients where ever u go .. awaiting to hear from u soon dear.. and thanks again :-)

      Hi khuloud.. miss u dear allot .. the cream cheese in the cream cheese frosting is like Kiri .. the cheese in Tiramisu is either mascarpone, or u can use Pock or el mara3i or so, the white one in glass. As for the oat meal, yes dear, it is SHOFAN I'll go back to the recipes and add these notes inshalla there too .. take care sweety :-)

      thanks allot dear .. so sweet of you :-) .. most of the recipes i submitted are really easy to make , like: Aama's pasta, chicken with thyme&olive oil, musakhkhun, chicken picatta, Okra with olive oil, shawerma, beef meatloaf.. in addition to spring salad.. these are really so easy to make and take no time .. For sweets, easy ones are like: basboosa, Tiramisu, Layali Lebnan, Lazy cake(and this ones speaks for its self :-D ) I'll keep on submitting easy recipes cause I know most people prefer that.. and if you or your friends ahave any question, pls don't hesitate..     i would say, she didnt cook her caramel for long enough and cream cheese and cream are not even needed so im sure that was a huge mistake for her. it looked terible. when i make it i drizzle it with strawberry sauce and shredded coconut on top of the cream at serving.... mmmm my husband loves it but its very rich, im actually a savoury girl but i do love making pretty deserts.

      really ?? u tried it ??? my friend pepared banoffee pie just few days before i saw the recipe here, but she made the caramel layer only caramel, no cream or cheese added .. the whipping cream was added as a layer on top of the banana..it was really niice ... tell me, what was wrong with "dine with me "recipe ??

    Huda, thank you so much for putting up these amazing recipes! I've loved all the delicious recipes you've given us! The flavours of Middle Eastern cooking are incredible! I have some friends from Lebanon and Jordan and my father's family had lived in Egypt for about 40 years so I can't wait to surprise them with authentic food - they're going to be amazed! You can't get recipes like yours here because most middle Eastern cookbooks have just the basics or fusion recipes that lack authenticity. Thanks again Huda : )

      Thanks Jackicam.. I'm trying to put, as you said, recipes that are not usually found in Eastern cookbooks, and some recipes are the way we make them back home, or ones i think only my mom's family makes.. Maybe I'll post some egyptian recipes, with my own touch or twist.. my egyptian friends say that the egyptian recipes i made are better than the ones they already do, that their husbands told them that: Huda is not egytian and she made them so delicious :-) .. so when you try them tell me what your family will comment :-) I'm glad you loved the ones posted already.tell me when you try any, and let me know if there's anything not clear or so ..       Thanks allot my dear.. I thought I should take the step and start doing something.. It's been long time I have the intention, but you know all my recipes are hand-written and need to be typed, so I just started last week to do so, at last !!!       I will soon inshalla .. just I have them hand written in my note books..I need to type them here so i can download them.. The recipes that I have are alllooooot ..and it takes vey long time to transfer them from hand-written to typed!! donno how people can make it .. since very long time I wanna do so, and even my friend ask me to put my recipes in a book in the market, but actually donno how to do so between long working hrs are other social activities.. but I'll try now to arrange more time for this matter .. and hope you and everyone, like my recipes and they woud become one of their favorites :-) Thnaks allot Jackicam
