Would love to make your Henry the Tank Engine cake but you mention a round loaf tin. I seem to be having trouble finding such a thing. Can you suggest anywhere?
Hi Jacki, sounds like you may have cooked it a little too long or at too high a temperature. The portions I used were large and quite thick. Next time try lowering the temperature and not overcooking. Salmon has a delicate flesh which does not respond well to overcooking. It will continue to cook through when you remove from the heat so you can afford to leave it looking a little uncooked in the centre.

Thanks Diane. Yes I did cook it on high and cooked it til the middle was done - I love salmon so I'll try doing that next time - Ta : )
