Dan has gained phenomenal renown for both his commitment to local produce and his ability to transform the seemingly simple into the sublime.

Any given morning you’ll find Dan Hunter in the kitchen gardens collecting herbs, flowers and leaves to make his menu at the Royal Mail Hotel even more fiercely seasonal; more extremely regional. This focus has seen it named Australia’s best regional restaurant by Australian Gourmet Traveller, and Victoria’s best in The Age Good Food Guide. Hunter’s career started in
Melbourne before moving to Spain where he rose to be head chef at Mugaritz for Spanish wunderkind Andoni Luis Aduriz.
