i think maybe as some said, just in case, cook on high temp in the begining for 20 minutes or so, and then reduce.plus make sure ur using a roasting pot or tray that has thick bottom, so it won't get burnt and temp is distributed in a better way.
I would suggest to add few table spoons yoghurt as well, marinate the day before, and cook next day. the yoghurt will make it juicy and won't show after cooking.for me, i would add 1-2 tsp meat spices as well
