I love Southern cooking - sharing communal laid back food like smokey ribs and corn on the cob and blackberry pie. I love spicy regional food like Cajun and Creole, Mexican and Thai. I enjoy the complexities of French cuisine and I do love junk food. I'm from an Italian background with grandmothers who were fantastic cooks - one from the North of Italy and the other from the south - so I got the best of both cuisines growing up. I also love reading about the history of food - especially medieval and Victorian cooking/ etiquette/ food produce and what people ate way back in the day.

I noticed that Huey has a new cooking show called Huey's kitchen. He must of read all the comments as he now gives all his recipes for free now. He still rabbits on with all that silly dribble though at times.

  • COOKING_MAMAâ„¢

jacki i was looking at Hueys page and saw your comment, i nearly cried with laughter, i agree wholeheartedly........ almost as good a cook (not chef) as 4 ingredients..... (hmmm ill keep my mouth shut about them cause its all BLEEEEEEEEEEEEP)

    • COOKING_MAMAâ„¢

hahahahaha agreed! hueys soooo bad, i watch it sometimes just for a laugh, he carrys on so badly now, and he over does everything. like he will say "oh just 2 teaspoons of that, not 47 million!" worst eggagerator ever! and he always says "the smallest amount" which actually means S*%TLOADS....

    • jackicam
      March 2010

Yeah, wouldn't they make an interesting cooking threesome...More suited to the comedy channel for the endless waffling, product placement and bad cooking techniques.

    February 2010

Wow jackie you have some gorgeous recipes. I ADORE southern food. I saved your page for future reference :) I also have had thoughts to create a cook book. It is so hard to find a cookbook with Authentic Moroccan foods in it here in Australia. Most Moroccan recipes call for masterfoods moroccan spice blend lol not the same when you want to get your hands into something and truly immerse yourself in the recipe. The only thing that stops me is that I am terrible with photography :( one day .. Good luck with your book I am sure it will be a great success.

    January 2010

Was a member of Huey's Cooking Club for a good many years - until he nicked my byline "Never trust a skinny cook!" for his last publication!! Lost the plot with his show - far too much "PRODUCT PLACEMENT"... it's so overt and in-your-face it's obnoxious. Made it a point NOT to buy brands promoted in the show - but that's just me being, well, me! lol

  • Twilight
    January 2010

I went to Huey's site to get a couple of recipes and I was very disappointed to find that I had to pay for them. I did a google search and I found that I could get those recipes for free. I don't know why he charges for his recipes where as James Reeson gives his away for free and I think that even Gordon Ramsay's recipes are free as well.

    • jackicam
      January 2010

I know! Weird isn't it! I used to watch Huey but not anymore - there's no point (he's annoying anyway because he rambles on too much about nothing) It seems to be a very greedy thing to do, considering most people are aware of what he's doing - I don't know why he still charges $$$. (maybe he's dreaming of retiring to the South of France or something...)

Hey Jackie!! I just signed up and found you straight away! Looks like the perfect foodie place to hang out in. Im going to have to get some of my recipes up on here soon. Im in the middle of baking a 1yr olds birthday cake at the moment. A chocolate fudge cake covered in fondant topped with an In the Night Garden character called Iggle Piggle. You probably will have no idea who the hell he is unless you know anyone that has a baby obsessed with the BBC series. He is a blue weird little character that looks a bit like Gumby. LOL! Im hoping I dont stuff him up...its my first attempt. Catch you on here soon once I get that finished.

    October 2009

Thanks guys! I still can't believe it! I had such a great time during the whole thing...especially when I finished cooking and had 3/4 of the bottle of red wine left over from my recipe ; ) But at the end of the day, everyone I've met on the Lifestylefood site are my real foodie family. And the other finalists were such great girls that I've told them to sign up - which Bollywood Bianca already has - you go girl! But thanks for the well wishes y'all : ) <-- BIG smile

    October 2009

OK I'm beyond myself... your cryptic comment about the Good Taste Nov issue has me wondering who's featured on those pages. Hope it's you! Am guessing you're a subscriber (so you've got your mag before it hits the news stands!) but I'll just have to sit and wait until Wednesday 21 Oct! I'm not good at waiting! lol (Birthdays, Christmas, anniversaries etc. - I think in advance, search for a perfect gift, know it will be well appreciated and the recipient will be stoked.... but just can't wait until the birthday to give it... they're always given early! Then I go out & buy a surprise pressie for the day... silly, aren't I? lol)

    • jackicam
      October 2009

You're just going to have to wait ; )P So everyone ends up getting TWO pressies! Wish I was on the gift list!

Jackie, just had to thankyou for the tip on the shredded beef for enchiladas!! Bought a 2.5kg blade roast (my butcher doesn't stock chuck nor beef skirt/flank :-( and I refuse to buy meat from the supermarket) on Saturday. Made a dry rub using cayenne, coriander, cumin and paprika which I liberally rubbed into the raw whole roast. Baked it for 3 hours Saturday @ 160 and again for a further 2 hours @ 160 on Sunday and it was D E L I C I O U S L Y shredable! Couldn't have done it without your help - husband is very best pleased with my new-improved enchiladas! xox

      September 2009

Glad it did the trick Phillipa. I usually wrap the meat tightly in foil when baking but the lidded casserole is a brilliant idea! Will give that idea a try next time we have Mexican
