Wine & Food Matching Tips

This May sees Australia’s biggest wine celebration – Aussie Wine Month – come to life across the country. Get some top tips on how to match your wine with your food!

Through an intoxicating mix of food, wine, music and epicurean adventures in Australia’s top restaurants and wine regions, Aussie Wine Month focuses Australians’ attention on the diversity, quality and value of wines from our own backyard.

To help celebrate our local top drops, some of Australia’s best sommeliers, winemakers and chefs have come on board. Aussie Wine Month ambassador Stuart Knox from Fix St James in Sydney has provided his tips on food + wine matching – perfect for those looking to enjoy an Aussie wine or two this May. 

  1. Sugar is a great counter balance to spice and any wines that have a sweeter flavour to them – like Riesling – work well with Asian dishes
  2. Sometimes it’s the condiments not the main dish that needs to be matched
  3. Match the palate weight of the wine to the palate weight of the dish – it’s the reason why sparkling wine works so well with oysters
  4. Similarly, think more about the structure of the wine and dish rather than actual flavours when matching
  5. Don’t be afraid to experiment!

Using these tips, Stuart Knox has pulled together the following sample menu as a guide:

  • Tasmanian Sparkling Wine - Sydney Rock oysters
  • Hunter Valley Semillon - Cold Seafoods like cooked prawns
  • Clare Valley Riesling - Spicy Thai Salads
  • Adelaide Hills Sauvignon Blanc - Yum Cha
  • Margaret River Chardonnay - Roast Chicken
  • Skin Contact whites from variety of regions - Savoury soufflés or any hot cheese dish
  • Yarra Valley Pinot Noir - Smoked meats, hot or cold
  • Canberra Shiraz - Chinese roast pork and/or duck
  • Coonawarra Cabernet - Standing Rib Roast with all the trimmings
  • Riverina Botrytis Semillon - Poached/Roasted fruit desserts
  • Rutherglen Topaque & Muscat - Coffee & truffles
