How to Make the Perfect Cupcake

To celebrate the launch of their new cupcake spatula, Zeal has shared their ultimate cupcake recipe.

Ingredients:

125g unsalted butter
125g caster sugar
2 eggs
125g self raising flour
1/2 teaspoon vanilla essence
2 tablespoons of milk

For the Icing:

150g unsalted butter
350g icing sugar, sifted
1 tsp vanilla essence
2 tablespoons of milk
Food colour - optional

Method:

1. Set oven to 200 degrees C
2. Beat softened butter with caster sugar and then add eggs and vanilla essence.
3. Fold in flour and then the milk. The Zeal cup cake spatula is excellent for both mixing the ingredients and scraping every last bit of batter out of the bowl!
4. Spoon into muffin pan or patty cases (you might want to grease the muffin pan with butter prior to use if not using patty cases).
5. Bake for 15-20 mins until golden. Can be tested by using a slim wooden skewer. If it comes out clean, they are cooked.
6. Allow to cool - preferably on wire tray.

For the Icing:

1. Mix icing sugar into softened butter, adding vanilla essence and milk as you go.
2. The finished consistency should be strong enough to hold its shape.
3. Scrape into icing bag or use Kuhn Rikon Cake Decorating Set (with 12 different pattern nozzles) to ice the cupcakes.

Icing can be coloured with food colouring or various decorations can be used such as hundreds and thousands, chocolate buttons etc.
