How To Make Ghee

Ghee is a delicious butter oil that can be used for cooking both savory or sweet dishes.

The flavor of ghee will enrich any dish and has the amazing ability to help your body absorb minerals and vitamins from other foods. Ghee is the perfect healthy alternative to use for cooking because it’s smoke point is extremely high, meaning it can endure high temperatures of 250 degrees celsius without burning.

Anastasia Zolotarev, founder of The Mango Kitchen, shows us how to make a basic ghee recipe simply using organic butter.


7 packets of unsalted butter (200g each)

How to Make It

Step 1: Place all the blocks of butter into a stainless steel pot on a low heat and let the butter melt.

Step 2: Once the butter has melted let it simmer for approximately 1 hour. During this time there are a number of things to remember:

- Do not let the butter burn. To ensure this keep it at a low heat the entire time. You want to simmer it- not boil it.

- Continuously remove the froth from the surface. This froth can be thrown away.

- During this time you can prepare the jars. Make sure they are clean and dry so that there is no presence of water.

Step 3: Once the butter is a clear golden liquid it can be poured into jars. Let the mixture cool for a few minutes before pouring it into the jars.

Step 4: Once you have poured the clarified butter into the jars, let it cool until room temperature. Place into a fridge and let it solidify.
