Nothing ignites the senses more than a home-made warm apple pie to indulge in this winter.
Artisan pastry chef, Leanne Beck from Sweet Infinity shares her tips on what goes into making that perfect pie to enjoy with family and friends this season.
When it comes to making pastry from scratch, many of us panic at the mere thought of it and head straight for the frozen section at the supermarket. So why should we take the time to make pastry from scratch?
Leanne Beck says, “While it does take more time to make your own pastry, nothing beats the taste or the texture of the end result. I firmly believe that making your pastry from scratch also ensures that your delicious treat is fresh and contains only natural ingredients without additives.”
As you gather your ingredients to make your homemade pastry you may stumble across an important question – should you use unsalted or salted butter?
As Leanne explains, “unsalted butter is best to use when cooking as it much fresher than salted butter. Salt is used in the butter as a preservative and therefore it can last as long as three months in your fridge. So instead use unsalted butter and just add salt when making your dough, that way you still get to season the pastry without losing the freshness.”
Now that your pastry is underway, it’s time to contemplate the contents of your pie. With varied climates in Australia, we rarely have to wait long to receive our next batch of apples. The variety to choose from in the market is extensive including Granny Smith, Red Delicious, Pink Lady and Royal Gala, each with different textures, flavours and some are better than others to cook with. With so many apples to choose from, how do you decide what apples make the best pies?
“Personally I get my apples from the Hall Family who are apple growers in Orange. I find that sourcing my produce directly ensures that they are fresh. But for those who don’t have this kind of access, I would suggest going for an apple like Pink Lady which is great for baking as it holds its texture,” says Leanne Beck.
For those who would like to go for a contemporary twist on the traditional favourite, why not create your own unique pie by adding another fruit.
Leanne says, “experimenting with different fruits in your apple pie is great fun however try to select one that compliments the flavour of the apple. Some favourites include blueberries, raspberries and cranberries but my personal favourite is Rhubarb.”
