
1. Let the steak get to room temperature.
2. Brush it with oil and season well with salt and pepper.
3. Heat a griddle pan until it’s smoking hot then add the steak. For a 2.5cm thick steak leave for 1 ½ minutes if serving rare, 2 - 2 ½ minutes if serving medium and 3 minutes if serving well done well done.
4. Turn the steak and cook for a further for 1 ½ minutes if serving rare, 2 - 2 ½ minutes if serving medium and 3 minutes if serving well done well done.
5. Leave to rest in foil for 5 minutes.
6. Tuck in and enjoy!
