There are many varieties and they may look the same but each carry a unique flavour and they all taste delicious. Popular varieties include pak choy, choy sum, bok choy, gai lan (Chinese broccoli), gai choy (Chinese mustard) and Chinese cabbage.
Look for greens with plump, firm stems and vibrant green leaves. To prepare, rinse them under cold water and remove discoloured leaves or flowering buds.
Try them as an accompainment to slow cooked pork belly, stir fried with garlic or simply tossed with oyster sauce. It is also best to stick to Asian flavours when cooking with Asian greens.
